The Bollinger estate, essentially composed of Grands Crus and Premiers Crus, represents nearly 400 acres, which guarantees the House around 2/3 of its supplies. Bollinger is particularly cautious when it comes to choosing the grapes, and implements a rigorous selection.
Bollinger carries out barrel fermentation. The use has become extremely rare in Champagne. It is however one of the pillars of the Bollinger style. The oak allows an exchange between the wine inside the barrel and the outside atmosphere. It reinforces the aromatic complexity whilst guaranteeing exceptional longevity.
