Monique, the mother, tries for 20 years to produce the best Savennières Roche aux Moines so that the Chenin variety can express it best with the terroir. This is note easy but it gives to the wine a real identity. Maceration, malolactic fermentation, new oak barrel, here are the key practices used by the domain. Today, there is also Tessa, the daughter who has just begun to work on the domain with her diploma of oenologist. She will continue the cultivation of the vines, the protection of the nature. It presents a bright yellow color with gold reflection, and a fresh smell a fruits, honey, apricots and peaches. The first palate is ropy and the last palate very intense.
Serve with fish, cheese and white meat.
