The color is a beautiful ruby, with a hint of purple still present on the meniscus, a sign that the wine is slowly approaching maturity. The initial nose evokes tertiary aromas of leather and delicately smoked meat; then, scents of undergrowth follow. On the palate, an immediate impression of freshness pervades the entire palate. It's round, full-bodied, and generous! The tannins are supple and ripe, offering no harshness. The acidity is in perfect harmony with the wine's structure and creates a mid-palate that further enhances the fullness and persistence of this Cairanne. Spicier notes then emerge, bringing a certain complexity to this wine, which pairs perfectly with duck aiguillettes, filet mignon, or lamb. Do not serve too chilled, preferably around 18°C.
Best before: 5 years
Grilled or roasted red meats: Beef ribs, leg of lamb, duck breast.
Game: Hare stew, wild boar in sauce.
Mediterranean dishes: Provençal stew, ratatouille, spiced lamb tagine.
Cheese: Hard, aged cheeses such as Comté or Parmesan.
