Grape varieties: Savagnin, Chardonnay
50% Savagnin aged in 228 liter pieces, partially filled, i.e. under veil. A selection is made in the barrels after 3 years of aging. The blend then takes place with the Chardonnay (also 50%), aged for the same duration, but in 30 hectoliter casks filled. Bottling takes place a few months later.
This wine will appeal to you slightly roomed, between 12 and 14°C.
To the eye, it appears a deep golden yellow, almost old gold. This is a full-bodied and powerful wine, lingering in its aromas of green walnuts and almonds. Delicate and very complex. The typicality of Savagnin combines the roundness and fatness of Chardonnay to give a magnificent balance.
It will enhance your fish and shellfish, white meats, snails and frog legs, cream dishes, fondues, and cheese dishes in general, including of course the AOP Comté.
It will be appreciated as it is now, as well as in ten years.
