Grape variety: Savagnin
Ageing in 228 liter barrels, without any addition or topping (natural evaporation of the wine), predestined to become a Vin Jaune after aging for a minimum of 6 years and 3 months. The veil of yeast that develops on the surface protects the wine and gives it its characteristic aromas. As for evaporation (38% in 6 years), it contributes to the concentration of this wine, which can exceed 14% alcohol.
Its color is a deep yellow with golden nuances: it is old gold. It is a powerful and robust wine, which develops aromas of green walnuts, hazelnut, almond and even truffle and curry which are found on the palate. A round and balanced finish finishes the palate with the aromas detected on the nose. Its structure makes it an unforgettable wine. It should be served slightly chilled and opened the bottle a few hours before consumption. Serve lightly chilled, at around 15°C.
An excellent cooking companion, he will enhance all dishes based on crème fraîche and mushrooms, as well as exotic and spicy dishes. It will be superb with pan-fried foie gras and magnificent with coq au Vin Jaune and morels, armorican lobster or grilled lobster. It best accompanies a long-matured Comté.
This wine can be consumed from 8 to 9 years after harvest in order to mature. Legendary wine for ageing can last up to a century.
